Gratitude in Solitude – Day 19

It’s Sunday and I usually like to try to relax as much as possible on Sundays. Rest and recuperate before the work week begins. That’s one of the reasons I try to get all my errands done on Saturday.

But resting usually includes sleeping in and getting a slow start to the day. We all know what that can lead to…. BRUNCH!

Pancakes or bacon and eggs, or biscuits and gravy, it is all amazing. When we are able to get back out there, that would also include one of my favorites – diner french toast with lots of whipped butter. Oh YUM, I can’t wait.

My family, three-plus generations, all love breakfast food and diners. I have fond memories of waffles for dinner or blueberry pancakes with blueberries my grandparents picked themselves and then brought what seemed like buckets of them to our house. We would put them in gallon bags and use them all year long. I miss almost gorging myself on the fresh blueberries they would bring us or eating them frozen, right from the freezer bags as my dad would cook up the pancakes in the morning.
