Today I a grateful that I have re-found my love of cooking. Before I cooked to keep my family fed, and still do, but now, with most of my kids out of the nest, I can usually cook what I want and get a little experimental.
This weekend I cooked a bolognese sauce. I made it once before and it was amazing. Now I took to tweaking the recipe just a little and it came out even better than before. So much that I was glad that I made a double batch so that we have some to eat later and perfect for a quick dinner.
Oh, this sauce is lovely. Coats the pasta well and gets only better with time. It even can be eaten solo, like a really loose Sloppy Joe. Sure, it takes hours for it to simmer but that only makes things better and better. The touch of cream (shhhh the secret ingredient) really pulls the whole thing together.
I really wasn’t sure if I was going to have room in the pot to add all the liquids in it, but it fit, barely. Pure torture for the next 2 hours as it just barely simmered away. So many times I wanted to just dive in with a spoon for “one more” taste. If I did that, there wouldn’t be any sauce left!
On weekends I do like to cook the recipes that take a bit longer, when there is no rush and then make a double batch for a night I don’t like feeling like cooking.
It may not be my favorite thing to cook. I’m not sure what that is quiet yet but it is becoming something I always want to have in my dinner stash and look forward to making.
